International Spirits Diploma (9 days)

 

Week 1 - Spirits Sommelier Course and Reading Day (2 days)

 

This Diploma in Distilling Course is an intensive spirits and distilling course spread over 9 days.  During this International Diploma in distilling you will look in depth at the flavours and history of the world of spirits and liqueurs.

Completion of this course will potentially give you 2 internationally recognised spirits and distilling qualifications with the world renown Brew-School and the Institute of Brewing & Distilling (IBD).  It will give you both the credibility and confidence to set up a craft distillery or work in the world of spirits and distilling.

We start the first day of the course by looking in depth at the world of spirits and liqueurs tasting a range of distilled spirits looking at their origins and flavour characteristics on a 1 day Spirits Sommelier Course.

We up skill you in the fascinating world of spirits and liqueurs so that you can talk knowledgeably about the world of craft spirits and how they can be combined with the skills of a mixologist to produce outstanding cocktails.

You then have a relaxing reading day on Sunday which allows your to catch up on what you have learned and also explore Bakewell and the surrounding beauty of the Peak District including the fabulous Chatsworth House.

 

Week 2 - Diploma in Spirits and Distilling (7 days)

 

The second week of study looks in detail at the distilling process and how to set up your own craft distillery.

You begin on Monday and during the next 5 days of study on our Practical Commercial Distilling Course with our Master Distiller Jamie Baxter you will work through the syllabus of the Institute of Brewing and Distilling (IBD) Foundation of Distilling course.  On the fifth day we drill down to explore the commercial elements and considerations of setting up your own distillery.

On the Saturday on the next element of this distilling course we focus on Gin; looking in depth at the history and production of Gin as well as Gin recipe development.  As part of this process we go on to distil the recipe you have created as a small batch of gin for you to sample. As part of this finale there will be a Gin Distilling and Gin Tasting Masterclass looking at how you can create stunning gin cocktails and therefore how you maximise the value from your craft distilled spirits into retail in a bar.

The course is led by our expert tutor craft distiller Jamie Baxter with contributions from a number of other visitng industry experts.  You will also go on several distillery trips to look at gin, whisky and rum distilling.

Finally, you spend a day distilling with a distiller.  This is a unique one day experience working alongside the Head Distiller on his 100 litre craft distillery to produce gin.  You will shadow him over the whole day of gin production from starting up the still to monitoring the cut points along with producing your own small batched gin on a 35 litre pilot pant.  You will then go on to bottle and label your gin ready to take a sample home to impress friends and family.
