Foraged brews & beverages (SOLD OUT)

This full day hands on course with expert forager and chef Chris Bax from Taste the Wild will teach you how you can create some fantastic foraged beverages and drinks using wild foraged ingredients.  You will begin the day with a short forage along the nearby Monsal trail before returning to the School of Food to create your own Elderflower Champagne.  Chris will then show you how to infuse vodka with the elderflower and fruits to create your own Elderflower and gooseberry vodka.

In the afternoon you will go on to learn to produce your own nettle cordial and Chris will also tell you how you can turn this into delicious nettle beer.  You will create your own wild spiced mulled wine along with a wild mint and cumin cooler.  Chris which teach you how to produce your own wild infusions.  The day ends with you learning how to produce the classic 'Dandelion and Burdock' cordial but this time using the real wild wood foraged ingredients.

Course times: 10 - 4 pm

This course includes refreshments and an informal light lunch which you will prepare.
