Trainee Brewer  Program - Gateway into Brewing

 

Brew-School's Trainee Brewer Program leading to an international award in Brewing combines the best of an internationally recognised Brewing Qualifications with intensive experience of working in a real microbrewery.  During this 2 week Trainee Brewer Program you will be taught by 3 Master Brewers to the latest syllabus of the Intsitute of Brewing & Distilling General Certificate in Brewing (GCB).  This study for a formal brewing qualification will be accompanied by brewing training on a live microbrewery using state of the art 1.5 bbl Moesche brewing kit.

 

2 Weeks Intensive Brewing Training

 

During the 2 weeks of intensive brewing training you will:

Be taken through the entire syllabus of the General Certificate in Brewing and be coached on passing the exam with a separate half day intesive tutorial session including sitting a mock GCB exam and looking at past papers for attendees looking at taking the exam. Included in the syllabus are: 

Beer Styles * Malting * Adjuncts * Mash Conversion * Milling * Mash separation

Wort Boiling * Fermentation theory * Fermentation principles * Brewing yeast

Beer maturation & Cold storage * Beer Prep Bright Beer * Beer Quality & process
Beer Flavour

Microbiology * Quality Systems * Cleaning Detergents * CIP * Water & Effluent

Process gases * Environment * Exam techniques

 

2nd Week Focused On Practical In Microbrewery Training

 

  • Spend a day looking at the importance and techniques of cleaning the microbrewery and the brewing equipment.
  • Look and understand the differences in brewing work in a small 1.5 bbl and a medium size microbrewery set up and be comfortable in operating in both a small and larger scale brewing environment.
  • Learn the importance of quality control and cellar management which will equip you to work and run a microbreweries tap room.
  • Have a face to face session with a career coach and develop your own bespoke brewing CV alongside your Brew-School Brewers Log.  Once you have developed your brewing career profile you will have unique access to post your Brewers Profile on Brewing Jobs the UK leading brewing jobs site.
  • On the advanced beer recipe module you will come up with your own beer recipe exploring in depth beer styles and what creates an award winning beer.
  • Having formulated the beer recipe you will then go on to produce commercially your own cask beer
  • During the 2 weeks you will watch the beer ferment and condition before being taken through the challenges of packaging the beer in a number of packaging formats: Cask, bottled, canned at each stage looking at the challenges of packaging a fresh food product in a colloidal stable manner.
  • The finale of the 2 weeks will be a Presentation evening event at the microbrewry tap room which will be thrown open to friends and family to attend and buy and sample the beer and watch the formal awarding of the Trainee  Brewer Program.
